Hamachi

Hamachi | Kanpachi

Hamachi, also known as yellowtail, is a type of fish commonly found in the Pacific Ocean. It's prized for its mild, buttery flavor and firm texture, making it a popular choice in sushi and sashimi dishes.

Kanpachi, or amberjack, is a species of fish found in the Pacific Ocean. It's known for its firm texture and mild, slightly sweet flavor, making it a sought-after ingredient in sushi and other seafood dishes.

Madai (Sea Beam)

A noble fish favored in Japanese tradition, Madai is prized for its subtle sweetness and elegant texture. Its flesh is pearlescent white, firm yet delicate—yielding with a gentle bite. Aged briefly to deepen umami, the taste is clean, oceanic, and refined, like the memory of sea mist.

Sawara

Sawara (Spanish Mackerel)

Sawara is a light and graceful mackerel, known for its soft, buttery texture and clean, slightly sweet flavor. Unlike its oilier cousins, Sawara offers a delicate richness without overpowering the palate. It's often gently seared (aburi) to release a smoky aroma, unlocking its hidden layers of umami.

Gindara (Sablefish)

Velvety, rich, and indulgent — Gindara melts on the tongue like warm butter. Sourced from cold northern waters, its high fat content gives it a luxurious, almost creamy texture rarely found in other fish. The name “Gindara” literally means “silver cod,” though it is not a true cod — it’s revered for its gleaming flesh and decadent mouthfeel.
